Recently, prevention of diseases by the way of controlled food has arisen
and attracted attentions from the modern society. Therefore, the scientific
region of gFood Biochemistryh, to study the relationship between food and
the human health has become quite important.
Laboratory of Food Biochemistry is concerining in this field. We are working
to find out the currently unrecognized functional food materials and their
active compounds that will improve and restore health. We are working in
this field using the organic chemistry techniques and knowledge, and more
than just searching and elucidating the functional compounds, we are also
working to find out the mode of action and target of the functional compounds
by using techniques which belongs to the field of chemical biology.
